Tuscany is one of the major regions in central Italy with deep-rooted  food and wine traditions. There is an impressive variety of peasant foods and wines in the region. The most popular ingredients for Tuscan meals are fresh local pork, beef, game, beans, olives and different types of mushrooms. Wines are made of outstanding quality grapes very well known to wine experts, such as Sangiovese, Canaiolo, Colorino, Malvasia Nera, Mammolo and others. Thanks to high quality natural ingredients, all typical Tuscan dishes, such as bistecca FiorentinaPappa al Pomodoro,Ribollita, have an authentic and delicious taste.

Methodology – The training course will include the following activities:

  • Professional seminars on the topic by recognized experts in the field;
  • Cooking courses focused on the most special Tuscan dishes;
  • Informative presentations, wine degustations and visits to authentic vineyards.

Detailed Description – The training week will start with a presentation about the history of cooking in Tuscany, raw materials and typical cooking techniques. Participants will be able to taste and cook a number of local meals. Attendees will also be introduced to winemaking techniques and will have an opportunity to visit local vineyards. In addition to the expanded knowledge of Italian wine, another area very important to the Italian food industry – olive oil production will be covered during this training.

Training Outcomes – After the training, attendees are expected to have a better understanding of the Tuscan food and wine industry as well as to improve their cooking skills by adding some new exquisite Italian dishes to their menu. During the training, a large amount of attention will be paid to wine and winemaking, therefore, the participants will acquire detailed knowledge regarding professional wine tasting, wine production and wine quality standards. This training will also expand participants’ career opportunities, as they will bring home new experience and knowledge from abroad which will make them more prospective employees not only at their home country but also internationally.
